Hushpuppy recipes

It's just the two of us for Easter this year, and since the weather is supposed to be beautiful, we have decided to have a fish fry.
I want to try my hand at some homemade hushpuppies, but I've never made them. Do any of you have a go-to recipe that you use?
We do like onions/green onions so those recipes are welcome as well.

2 cups self rising cornmeal
1 medium jalapeño, fine diced
1/2 t salt
2 beaten eggs
2 green onions, fine diced
Buttermilk
2 T sugar, optional
1/4 cup fresh kernel corn ,optional
Mix well with enough buttermilk to make a stiff batter . Spoon into 325 degree oil and cook until golden. I use two small spoons to drop into the oil…one to scoop and the second spoon to push the batter into the oil.

More…I’m guessing…2/3’s cup, maybe. You want a stiff batter that will slide off a spoon.

Everything Brenda Gantt fries on Facebook that I've tried is delicious. She makes these onion "critter" hushpuppies that are addicting. They're sort of like onion ring hushpuppies in a way. This is a Facebook video and start at 8:36 to see her start the hushpuppies. However, the chicken thighs are good as well.

Hush Puppies
Hush Puppy Mix - To make about 10
• 1 cup corn meal.
• ½ cup flour.
• 1 large egg beaten
• 1 dash of salt.
• ½ teaspoon black pepper.
• 3-4 teaspoons sugar.
• ¼ teaspoon of baking Powder.
• ¼ cup grated or finely chopped onions.
• ¼ cup of finely chopped parsley. (optional)
• ½ finely cut up Jalapenos pepper
Mix all items in small bowl.
• Slowly add milk and mix. The mixture should be very, very thick.
• Set aside to cook later.
• Note: This mixture will absorb moisture while outside and should be put in a sealed container.
Cooking
• The grease should be about 325 deg. and deep enough to cover the hush puppies while they cook. A little cooler than temperature used to cook the fish.
• Take out about 2 tablespoon of the mixture and form into a round ball about ¾ to 1” in size. If mixture is too sticky, add more cornmeal/flour.
• Carefully set “ball” into grease. DO NOT drop it in the grease.
• Turn Hush puppies over while cooking.
• Cook for about 3 to 5 minutes until golden brown.
• Take out and place on paper towel.
Spread a little butter on the hush puppies while hot and enjoy!

Brenda knows what she is doing. Those hushpuppy critters are very good. She's an LA girl, and they know how to cook vittles.

I agree. When she fries, she coats whatever it is in just a little buttermilk and then flour or the self rising cornmeal depending on what's she making. She takes a bite on camera a lot of the time and whatever it is sounds so crispy.
She does eggplant and green tomatoes in chunks rather than slices and deep fries. They are not greasy like they can be when done in slices in a skillet. I'm sold on her methods of frying.

I think Mike Anderson's has the best hush puppies. This is straight out of Mike Anderson's cook book:
1TB Salt
2 teaspoons cayenne
1.5 cups sugar
1/2 teaspoon black pepper
1.5 cups evaporated milk
1/2 cup chopped green onions
1/2 cup finely chopped green bell peppers
1.5 cups finely chopped yellow onions
2.5 cups yellow cornmeal
1 cup self-rising flour
Cottonseed Oil
In a large bowl, combine all ingredients except oil. Mix well. Heat cottonseed oil to 350 degrees. Drop hushpuppy mixture into hot oil by spoonfuls. Fry 4-6 mins.
Serves 6-8 people

We made Brenda Gantt's hushpuppies again last night. So darn good if anyone is doing a fish fry this week.

Never tried this one but it sounds good. Of course, it needs to be scaled down for home use.

I've looked at that Mike Anderson's recipe before and always thought that the 1.5 cups of sugar in there must be a misprint. That seems like an excessive amount to me.
Have you made them before with the full 1.5 cups and didn't have a problem with them browning instantly due to the sugar content?
I will need to give it a try if you say they are as good as the ones in the restaurant.

Its just me & the Mrs. When I only need 6-8 hush puppies the House Autry Hush Puppy Mix is pretty damn good & all you add is water.

I agree. House of Autry is good and you can add whatever you want like jalapenos and corn if you like. For real lazy convenience, these are pretty good too.

I tried the House of Autry once and was disappointed. Maybe I did something wrong because I've heard positives about it.
