What will work? Doing Link's pork belly recipe and I'm not going to find juniper berries in Mecca. What is the flavor profile and what will substitute?

WF isn't sophisticated enough for The Mecca. I'm going to have to be creative.

Slug of gin for the pork, the rest of the bottle for you. You get drunk enough you won't care about not having juniper berries.

Seriously, I'd use gin.

You might find dried at a store.

Gin is the right substitute/ 1 tsp for 2 berries. And a swig for the cook.

I've got one store I can check;otherwise, I'll just evaporate some gin and wrestle with the remainder...

Red Stick Spice has the dried berries. I used them in my pastrami cure, worked well.

Thanks. We've got one out by the mall, but I doubt I get there. If Vieux Carre doesn't have dried ones, I'll bum half a cup of gin from my neighbor and reduce it.
