Not everyone wants to spend the time to do. Like I said, in a pinch, it's great. I can have jambalaya in 10 minutes, or I can have a better batch of it in 2 hours. Sometimes I'll want one, and sometimes I'll want the other. Different strokes for different folks. The Jambalaya Shoppe, like most comfort food restaurants (BBQ, Italian, Cajun, Soul Food, ect), can't match the quality of home cooked, but it is convenient and serves a niche.

The one that moved into the shopping center across the street is not the same owners. Same franchise or whatever yes, but not the same workers. The food here is not as good as the one that burned down.
The other owners are currently working on a new store called "The Jambalaya Kitchen" on Jefferson

Pot & Paddle Jambalaya Kitchen is owned by Chuck and Cynthia Lavigne. The Lavigne's have been serving Baton Rouge, LA locals and visitors authentic Cajun dishes for over seven years. Chuck and Cynthia are former owners of the Jambalaya restaurant on Old Hammond Highway across from Hammond Aire Shopping Center. After a devastating fire in December 2013, their restaurant on Old Hammond was shut down. The Lavigne's are relocating their restaurant to 9844 Jefferson Highway and renaming it Pot & Paddle Jambalaya Kitchen. Stay tuned for the Grand Opening!

Wow. You really hurt my feelings there, pal.
Jimmies are so rustled right now, I don't even know what to do with myself.
Also, the sausage is the WORST part of the jambalaya anyway. This guy got lucky, IMO.
