Roasted cauliflower? Been there, done that. But roasting a whole head of cauliflower? Now we’ve got your attention. This recipe has you slathering cauliflower in a spicy yogurt marinade and roasting it at a high temperature. The result is an amazingly delicious dish that’s as dramatic in presentation as it is easy in preparation. Serve it with a big green salad (we suggest lime juice and olive oil for the dressing) for an easy weeknight supper or your next “the vegetarians are coming to dinner” party.

Pretty good presentation, if nothing else.

Yeah, I almost didn't want to cut into the damn thing when I took it out of the oven.

I did need something to dip it in though, like Domenica does with their roasted cauliflower.

Domenica's dip is softened crème cheese, goat cheese, feta cheese and a couple tablespoons of heavy cream. Whisk all together then drizzle a good olive oil over it and a bit of sea salt. Use for dragging cauliflower in it.

I add just a pinch of cayenne pepper to the cheese. Gives just a bit of heat.

Looking at the recipe, I can't imagine you couldn't just choose to leave it out.
