Not sure how I’ve never had this before, but I found Chef Prudhomme’s recipe & I’m gonna try it.

Chicken Big Mamou is fricking delicious. And, yes, if you put it over noodles, you are a savage.

It is incredible, been making it for years. A little over leftover mac & cheese is an instant heart attack. So good. Never had it with rice but with noodles it is to die for. Probably the thing I've made most from his cookbook.

Turns out I have been making pork chop big mamou for decades. I just called it pork chop spaghetti.

Funny how any not well-known “Cajun” recipe gets so much craze on this board. Like I’m cool because I love a recipe you don’t know about. Meatball stew is a great example. It’s hamburger steak rolled into balls.

there are many "cajun" recipes that are garbage. Sauce piquant comes to mind

Those comparing it to spaghetti are correct. It replaces Italian herbs (basil, oregano, etc) with Cajun seasoning. Everything else is the same as a red gravy. But hey, I’m not against it at all. If it’s good, keep on cooking it.

Made it yesterday afternoon and it was good - reminded me more of a sauce piquant than pasta sauce
