Jacob's vs Bailey's Andouille Thunderdome

Ok, not really a Thunderdome, just my thoughts. Picked up some of both today. I'd had Jacobs before, but not Bailey's. My opinions and crappy pictures are as follows:
Bailey's (half in the wrapper) is lighter colored and is a little short of Jacobs in the flavor dept. However it has a softer rind and I like the texture a bit more. Both are very good. I give the nod to Jacob's. Wife liked Baily's best.
Bonus Thunderdome, Jacob's Tasso vs Bailey's Tasso
Baily's taste awesome. Perfect blend of smokey and salt. But it's not so much tasso as it is pork jerky. Or maybe the batch they had to day was overly dry. But it was chewy and not a texture that would really kick arse in a dish. Jacob's was a much better texture. Opposite of the Andouille in the fact that it did not have as much flavor as Baily's. Again I give the nod to Jacobs. The wife picked Bailey's. Of course she really doesn't know wtf tasso is.

So I give a slight edge to Jacob's in both depts. Both are outstanding. A portion of all found it's way in this pot of beans along with a Jacob's hock.

If you're talking about Jacob's on Airline I don't like them as much as Bailey's. My order of preference is Wayne Jacob's Smokehouse, Bailey's and then Jacob's(on Airlineand I only go to Jacob's if the others are closed or out of what I want.
I went to Bailey's just this past Saturday mainly to get their Chicken Andouille(BiL)can't eat red meat.
I also like Bailey's tasso better than the other two.
I'm pretty sure Jacob's uses manmade casing whick I finf tough and papery.

I can believe it. The casing and the outer edge of their Andouille is tough and somewhat rubbery. It seem to have more flavor than Baily's to me though. Bailey's tasso is like jerky. Or at least it was today.

I like the flavor of Don's, but I often find big chunks of fat in it.

Jacobs, then Wayne Jacobs for me. Haven't had Bailey's but the pic tells me that I'd find the smoke lacking for what I want in andouille.

Balls is.... Well, 100% accurate. Did a taste test at my house a couple years ago - wirh Couchon included (i happen to be eating lunch at the Butcher that day, they are by no means a smokehouse staple).
Jacobs beats Baileys - on all of the above. Albeit, Baileys probably beats everyone in most towns, just not Laplace.

I'm a big favorite of Jacob's, not that it's miles better than Bailey's, just prefer it. The tasso is excellent also. I always peel the casing off of the andouille before using.
I do not like the Jacob's smoked sausage, casing is way too tough and you can't remove it. Their hogshead cheese is excellent although it is somewhat inconsistant, sometimes the hot if perfect, I love very spicy, sometimes the hot is mild and sometimes it is too hot for me. I presume it is not always mixed thoroughly.

I agree that the casing on Jacobs is kind of tough, but the flavor is far superior to the others.

That is a fack. I remember cursing the casing the last time I got it. I picked up another lb yesterday. Same tough arse thing is on this sausage.

Hmmm. Sister in law is from there. Been a few times but never knew of these places. Usually just hit the halfway house for drinks and to cause a little ruckus.

Wayne Jacobs for me....loads better than the other two, with a coarser grind, a bit more smoke, and overall better flavor.
