I left some black-eyed peas sitting out on my counter for two days soaking. Couldn't get to cooking them yesterday and forgot to put them in the fridge overnight. Should they still be safe to cook with today?

No. They are likely full of bacteria and might get you sick. Buy new beans. Cheaper than medical treatment for food borne illness.

Exactly, why risk it for some cheap beans?
