Leftover celery and carrot ideas?

I made a big batch of soup but still have leftover celery and carrots. Ideas for how to use them up in something other than another soup?

Fry up some wings and serve as a side. Other than that and soups, they're pretty much worthless. I take that back, Celery is great in my wife's cornbread dressing. So either wings or dressing.

I chop carrots into medallions and make honey-carrots as a side dish. I use a Martha Stewart recipe, but I cook mine a little longer because I don't like al dente veggies.

You can freeze them for a future stock or take the suggestion for serving them with wings and some blue cheese dip.
Look up recipes for gingered carrots. Good side.

Why not just freeze them? I love to chop up extra veggies and freeze them for easy use. You won't want to use frozen vegetables for just any dish but it would be go great in a soup or gumbo or anything that really gets cooked down.

Buy some cheap arse little steaks, a couple of potatoes and some beef stock.
Hit the steaks up hard with pepper and a bit of salt. Brown them.
Toss the steaks in a crock pot with the celery, carrots and cubed potatoes. Cover everything with stock. Toss in whatever seasonings you have -- oregano, tomato sauce, garlic powder, etc.
Cook that all day.
When you get home, put on some rice.
Eat.
Hit the steaks up hard with pepper and a bit of salt. Brown them.

Carrot souffle? I've never made it, but was served some that everybody was positive was sweet potatoes. Unfortunately, there's a lot of sugar in it.

You could just snack on them. I like munching on raw carrots and celery both.
Put carrots in a lettuce salad. Put celery in potato salad.
Roast them with potatoes and onions and some kind of meat. I've got a great dish I make with kielbasa. I slice and brown the kielbasa, add onions, garlic, potatoes, carrots, and celery, beer, horseradish, Worcestershire, a couple bay leaves, thyme, black pepper and salt to taste. Roast until everything's tender. It's amazing. The garlic, beer, horseradish, and Worcestershire make for an intoxicating aroma. (I like to use Sierra Nevade Pale Ale for cooking.)
