We have a Meyer Lemon tree in our back yard. It gives two crops per year, one of which is coming in right now. One of the things I always look forward to doing with the lemons is making Lemon Drop Martinis. This recipe works just as well with regular lemons.
Lemon Drop Martini Recipe
Ingredients:
*1 1/2 ounces vodka
*1/2 ounce orange liqueur (I perfer Cointreu, but you could use Triple Sec, Grand Marnier, Patron Cironage, etc.)
*1 teaspoon sugar (use superfine sugar if you have it)
*1 ounce freshly-squeezed lemon juice
*Sprite (or 7-Up, or Club Soda)
*Ice cubes
*Sugar for dipping the rim if desired
*Twisted peel of lemon
Preparation:
Mix the vodka, orange liqueur, sugar, and lemon juice in a cocktail shaker half-filled with ice; shake well (supposedly the cocktail is to be shaken 40 times)
Pour strained liquor into sugar-rimmed martini cocktail glass and garnish with a twisted peel of lemon.
I like to add a splash of Spite or 7-Up, or Club Soda, but you can leave this step out if you prefer.
To create a sugar-rimmed glass, take a lemon wedge and rub the drinking surface of the glass so it is barely moist. Dip the edge of the glass into the sugar.
Makes 1 serving.

I love Lemon Drop Martinis! Unfortunately, all booze now gives me migraines. This looks so good.

Thanks GG. Bummer about the migraines. I used to get them when I was in my 20's. They're horrible.
