Only one I've seen is the encyclopedia.

I own a copy of "the Evolution of Cajun and Creole cuisine." I found it to be an excellent cookbook, and it also contains a lot of interesting history. Any cookbook by Folse will probably be good IMO

The Encyclopedia all the way. Its $$$ but very worth it. Fantastic book-book, in addition to being a great cookbook.

The Encyclopia of Cajun and Creole Cuisine.
I have most of his cook books, but this is the one I use the most. If you don't have any, get this one first.

I received an autographed copy of one for Christmas one year. I believe it's called Something Old, Something New. It has a lot of Cajun and creole recipes with the old school way to cook it and a newer way to cook it healthier. We like it since we've started to try to eat better.

I have them all. I would probably get the Encyclopedia first, but I have used After the Hunt more than any. They are great, informative books. However some of his recipes just don't seem to work. The cook times and methods more than anything. Especially a few I've tried out of the fishing one- Hooks, Lies and Alibis. I still recommend them all though. ..

Because the encyclopedia has like 100+ pages about the history of Louisiana and the evolution of our cuisine. It's much more than just a cook book.

Damn, the encyclopedia is at least $75. That's a lot of damn money. Amazon has it as a textbook rental.

The books are a good read.
But in my opinion the recipes I tried sucked.

Encyclopedia of Cajun and Creole Cuisine is the best.

Sure there may be cookbooks with better recipes but I think The Encyclopedia is one of the best overall cookbooks out there. It's beautifully done.
The recipes are great and the pictures are fantastic. It's a staple that has a little bit of every type of Louisiana cuisine. FWIW almost everything I cook from that book turns out good to great. There's a bit of history about each one of the dishes. Tons of history about Louisiana and each of the festivals in the state. And one of my favorite parts is the holiday menus towards the back that have classic menus for every holiday like New Year's, All Saint's Day, Mardi Gras, Mother's Day, etc. I always check that out for ideas before putting together my menu for holiday dinners.
