plus fixins...5lbs each max? Only planned on doing one...but I got people sniffing for an invite.

I mean you could just divide this into the weight of the sack.
Men will eat more than 5lbs though so you better have lots of fixins

I had this recently.
Had 6 originally. 4 guys and 2 girls. It was going to be 1 sack, fixings, and other stuff to pick on. I think it's the max number for a sack.
If you think it's going to be more, get another sack.

I mean so many variables... all dudes or women too? If mixed company, 5 lbs per person. 1 sack is barely enough for 7-8 people. More than 8, I get two sacks.

Will people be drinking it up and how many eat addys?

It depends on how many heavy hitters you have too. Some guys can sit down and knock out more than 5lbs. The general recommendation is 4lbs per person in mixed company. However, a lot of people have been waiting to eat crawfish based on the price, so keep that in mind.

I usually go 7lbs/person. Guys will eat 7-9 eating all day and women likely 4-6 depending. Kids a few lbs. I find 5 isn't as safe a bet usually unless you have a ton of extras in the boil.

Basically this.
I've planned out crawfish boils for a wide range of groups, but for a mixed group of men and women without kids, 5#/person is the best bet. Keep in mind, your average sack is NOT 40#. A full sack weighing 40# is petty small crawfish. Good size crawfish weigh around 35# for a full sack.
If it is families, it's a different story. Most kids under 12 eat a negligible amount and also either the mom or dad will end up not eating much to keep track of said children. If it's families, I feel comfortable budgeting 3.5-4#/adult and upping the fixins because the kids are much more likely to eat potatoes and corn than sit there and peel crawfish.
If it's a sausage fest, I would go with 6-7#/man.

I figure 5 lbs per person for a mixed crowd. I've never ran out doing that

no more than 8
The key is NOT to dump them on the table. Fix a portion for everyone and say the vegtables are right there..... help yourself. If worst come to worst and you have to invite them, boil 1 pound of shrimp per person to supplement the crawfish.

Kingpin in NOLA advertised to social media $10 all you can eat crawfish on Sunday. We show up, there's about 40 people at the bar and outside. They only purchased 3 sacks. It was like a fricking herd of goats when the crawfish were put on the tiny 8' x 2' table. No thanks.

Agreed, trays are the way to go.
Plus, crawfish stay hotter longer not dumping them all out at a time

I refuse to host an event and offer a minimum of food. Six would be the MOST I'd have for one sack. It's better to have leftovers than guests who pretend to be satisfied because there is hardly enough.

I've always heard 5 lbs. per person as a starting point plus plenty of extras... adjust up or down depending on the demographics of the crowd.
