Took a job on the Cajun prairie a year ago and have been looking far and wide to find the best smoked sausage, boudin, cracklins, etc.
Regarding boudin… hard to beat Mr. T’s. They have regular and smoked. I’ve only tried the regular and it is perfect. Has anyone else tried their stuff?

The first time I tried their boudin it was fantastic. The second time was a flop. Not sure what happened.

I tried it twice and it was better the second time. I even bought some frozen as a Christmas gift for some Texas friends.
While we are on the topic… Mowata Store and T-Boys in Eunice both have excellent boudin.

Have you tried one of the kabobbs at the Chevron station at the corner of US 190 & LA 26 in that area?
If not, I recommend. Get a shrimp one and a chicken one.

I'm intrigued now but damn that place is on the way to nowhere. My current favorites are T-Boys and Bourque's with Nunu's and Paul's in close second. I'll have to make the trip for science.

I have to cruise from where I work to Lake Charles on occasion and I’ll just take 190 all the way to Kinder. I stopped in right before Christmas and the lady running the place was so helpful and informative. She discussed gift options for me to some out of town peeps then offered me a sample of boudin since I was spending a good bit of money.
The best description I have is it’s not too “thick and ricey”, it has a good smooth texture in the casing. I am a fan. There’s a ton of good options down here, but I have to give them the nod.
Mowata is damn good too.

That's actually really nice to have at a place in the region of Elton. When you get West of about LA 13, and especially West of LA 26, the vast majority of boudin becomes much more ricey, which in turn lends to lack of good meaty flavor.
Mr. T's is one of the exceptions to that, and the boudin is delicious.

Nice to know my opinion can be backed up. Wasn’t sure if that was a thing, but if boudin is too ricey I’m gonna be disappointed.

I think Mr T’s is the best boudin around. I’ll take it over any other boudin in South Louisiana. Very underrated

I’ve been preaching the gospel of Mr Ts boudin for a couple of years. Nobody wanted to believe me at first but they have been getting some traction here on TDFD in the last 6 months.
If eating it fresh, my preference is the smoked. If getting it to go to reheat later on the grill, unsmoked is the way to go.
Their pure pork sausage is 10/10 also. Possibly my favorite pure pork, but they still haven’t completely thrown Rabideauxs off the throne yet IMO.
One last thing. If you can find a stuffed Tasso roast, don’t pass on that. It makes a killer rice and gravy that is different from the usual.

But, I'm in Abu Dhabi, so I will head to the grocery store in the morning, and tomorrow will be making my own boudin!
Pork room at Spinney's or Abela, already have some pork casing I bought in Dubai a few days ago. Make my own Cajun seasoning at a local spice shop near the house, but I bring my Cayenne pepper instead of using their Indian chili powder, but some of theirs's is OK.

Wiki says pork sales there are regulated and limited to non-Muslims. I take it you don’t have trouble finding it.

The owners (Steve Zaunbrecher) is cousins of Donald Link (Cochon) and Billy Frey (Billy's Boudin). Donald Link learned to cook at Steve's father's house and mentions him in his cookbook.

Large family.. Same family as the Frey meat packing and smoked meat family in New Orleans.
