Need a Crawfish Mac & Cheese Recipe

I tried a recipe over the weekend, it came out ok & I know what I did wrong
Interested to try a few different ones go see which I like best

I am not a cook by any means although I am trying more things
Crawfish Monica doesn’t look to have all the cheese that my recipe does
I’m probably wrong but Crawfish Monica seems like a spicy crawfish fettuccine Alfredo
I also think chicken roban is spicy chicken fettuccine Alfredo
Basically Alfredo with blackening seasoning

Olive or Twist folds New Orleans style BBQ sauce (butter, Worcestershire, garlic, lemon, herbs) into their Mac and cheese and it takes it to another level.
I imagine adding crawfish to that would be great.

The recipe for Cochon Butcher’s pancetta mac n cheese (search for it, it’s been published) would work well, adapted to crawfish. Essentially, you cook down the trinity with some finely diced smoked pork, then purée it and use it to flavor the bechamel used to make the Mac n cheese. I’d add a small amount of crawfish to be sautéed and puréed with the trinity, then add the bulk of the crawfish along with the cheese to be mixed with the pasta.

This is Emeri's Seafood Mac and Cheese Recipe. I've made it with lobster, crawfish, and shrimp and crabmeat. Lobster was the best.
Ingredients
Coarse salt and ground pepper
1 pound elbow macaroni
6 tablespoons butter
1/2 medium onion, finely chopped
1 garlic clove, minced
1/3 cup all-purpose flour (spooned and leveled)
3 cups whole milk
1/8 teaspoon ground nutmeg
1 pound coarsely chopped cooked lobster, shrimp, crawfish, or crabmeat, or a combination
4 cups (1 pound) mixed grated cheeses, such as Parmesan, cheddar, Swiss, and fontina
1/2 cup panko breadcrumbs
Directions
Step 1
Preheat oven to 400 degrees. In a large pot of boiling salted water, cook macaroni 2 minutes less than al dente. Drain; rinse with cold water. Set aside.
Step 2
While pasta is cooking, melt butter over medium in a large saucepan. Transfer 2 tablespoons melted butter to a medium bowl, and reserve. Add onion and garlic to pan; cook until softened, 3 to 5 minutes. Add flour; cook, stirring, 1 minute. Add milk; whisk until smooth. Bring to a boil; reduce to a simmer, and cook until sauce has thickened, 2 to 3 minutes. Season with 3/4 teaspoon salt, 1/2 teaspoon pepper, and nutmeg.
Step 3
Remove pan from heat. Fold in seafood, macaroni, and cheese; transfer to a shallow 4-quart baking dish. To bowl with reserved melted butter, add breadcrumbs and Creole seasoning; toss, and scatter over macaroni mixture. Place baking dish on a rimmed baking sheet. Bake until topping is golden and sauce is bubbling, 15 to 20 minutes. Let cool 5 minutes before serving.

I just saw an episode of DDD that had an interesting crawfish mac and cheese.
They blended crawfish tails and made it as a base for the cheese sauce.
They then added in whole crawfish tails for the final product.
