Need a red snapper recipe for tonight

Just picked up 2 nice snapper filets on the half shell. I also have some fresh crawfish tails if needed. I’m thinking about pan searing it and making s menieure sauce. I’ve never cooked snapper before but am not afraid to try anything. What ya got??

And my suggestion would have been on the grill with some garlic herb butter and lemon

I love to rub it down with sriracha then crack some salt on it. Grill it with pads of butter and lemon slices sitting on top.

No big deal, I went to the store looking for speckled trout and they were out so I grabbed two good looking pieces of snapper (pun intended).
I wound up mixing up some bread crumbs, lemon pepper seasoning and a little paprika and sautéing them in olive oil. Came out great, my first time having red snapper I played it safe. I really wanted to grill it but was in a pinch and didn’t want to waste it on my first shot.

Grilled snapper on the scales is super easy and delicious.


I like to season with Tony's and a touch of lemon pepper. Rub some light olive oil on it.

Throw on the grill, meat down for a min or so to lock that seasoning in and sear the meat. Turn it over and let it cook till fluffs up and you can begin to pull the meat with a fork

I chop half a yellow onion, half green bell pepper, couple cloves of garlic if you like and sauté. Then add a can of diced tomatoes, salt, pepper and a bit of dried oregano.

Pour that over the filets in a baking dish and bake uncovered until fish is just cooked. Serve over rice.

If i feel like putting in the effort, I try to mimic the Cedar Plank Redfish from Ruffinos when I have fresh snapper. Its delicious.


Otherwise, grilling on the half shell is always great too.

Season fillets with whatever your preference is (mine is old bay, and a little lemon pepper) mix butter and hot sauce, baste it heavy, put fillets over hot coals with scale side up first, don't scrape with spatula until meat releases from the grill (around 5 min), flip and finish scale side down on over slightly lower heat, baste after flipping.

I usually just season how you'd like, place it on a med-hi skillet, add some butter. Cook for a while, flip, add butter.


Super easy


It's not fancy, sure there's ways to do it better but I do this all the time and it's delicious


ETA: it's similar to blackened but my hood doesn't evacuate smoke well so I do this method
