New Years Day recipe Black-eyed Pea Jambalaya

anyone have any good ideas for cabbage and black-eye peas?

I am going to make a black eyed pea jambalaya
a recipe from Vernon Roger...very good.

1 lb Andouille
1/4 lb tasso
2 medium onions (chopped)
1 stalk celery (chopped)
2 pods fresh garlic (minced)
2 tablespoons butter
2 15 oz can black eyed peas
1 jalapeno pepper (chopped)
1 teaspoon cayenne pepper
1/2 teaspoon salt
1 teaspoon white pepper
1/2 teaspoon black pepper
1 can rotel tomatoes
4 cups cooked rice
3 bay leaves

Melt butter in skillet and brown chopped andouille and tasso. Stir in the seasonings, rotel, onion, celery, bell pepper and garlic. Saute for 10 minutes. Add bay leaves, jalapeno and peas. Simmer for 30 minutes. Add cooked rice and simmer 10 minutes. Remove bay leave before serving.

Enjoy~

I leave out the jalapeno and use the black eyed peas that have the pepper in them.

I cook black eyed peas like red beans. Little tasso an onion some seasonings and wal la.

Cabbage can be done in cabbage rolls which are good but takes time to make and always use green cabbage because the purple doesn't get as soft.

I'll just cook it down and eat some of it but toss it afterward. Can't eat much.

Best cabbage to me is coleslaw and I'll make that as well. I like to add dry roasted peanuts to my coleslaw like Mike Andersons.

1 pound ground beef
1 pound ground pork
1 tablespoon butter
2 cloves garlic, minced
1/2 teaspoon salt
1/2 teaspoon cayenne pepper
1 cup cooked rice
1 can tomato sauce
1 can rotel tomatoes
1 medium jalapeno, chopped
1/2 teaspoon black pepper
2 medium onions, chopped
1 can black-eyed peas
1. Pull 7-8 cabbage leaves from head and boil till tender .....about 5 minutes

2. In butter, brown meat. Add rotel tomatoes and simmer 5 minutes. Add onions, parsley, seasonings, pepper, soup, mushrooms, and rice....simmer about 2 minutes.

3. Roll equal amounts of mixture in cabbage leaves, secure with toothpick, place in buttered baking dish, cover with tomato sauce and enough water to cover rolls. place covered dish in 350 degree oven for 1 hour

This catches everything in one dish...blackeyed peas, cabbage, and pork.
