One pot meal - White beans & Smoked turkey necks

For a total of $11, I feed 6 guys on shift, using one pot (except for rice cooker).

1 pound white beans
1 pound rice
3 pounds smoked turkey necks (make sure you do not get "Cajun" or spicy)
Bag of frozen chopped onions and peppers
Small Tasso.

Cube up Tasso, add everything but rice to large pot and cover with water. I usually have 3-4 inches above beans and necks.

Add spices (I use salt, pepper, cummin, parsley, paprika.)

Cook covered for 3-4 hourson medium heat, adding water along the way.

I will mash up hand full of the beans about 30 mins before they are done, to get the creamy bean juice.

Serve over rice.

I laugh when people say you cannot cook cheaply. There is obviously healthier meals but that's really not that bad for you.

This is pretty healthy. Other then a 1/4 pound block of Tasso, there is no unhealthy stuff in this pot.

Tasso is just pork, not actually that bad, Most of the fat the renders out in the curing process.

I love white beans. I would eat 2 servings.

There are many cheap "whole food" meals out there. All you need is a little planning.

No, I never soak my beans, just boil the shite out of them and mash a hand full at the end.

why not just use sausage or andouille?
those necks are only good for crabbing

You must have never tried necks (or you trying to keep on the DL). Turkey neck meat is the best meat on the turkey (just be careful of tiny bones)

This gave me the craving for white beans, but I used salt pork instead of turkey necks.

Do you guys prefer to use navy beans or great white northern beans?

Onions and peppers aren't that expensive and they don't require refrigeration. You don't need to go frozen.

I think some people like the convenience it brings to him. I personally dislike it since they are never diced or chopped how I like them, and I enjoy cutting my own stuff. My knife and chopping skills are sharp though.
