Parmigiano rind in tomato sauce

Just recently discovered this tip and you get the umami from parm without having to grate $18/lb cheese into the sauce, also before I serve it I seek out that rind and eat it and it’s absolutely the best bite in the whole pot

Good in soups too. I save the Parmesan rinds in a zipper bag in the fridge or freezer until it's soup time.

Whole Foods sells just the rinds for this purpose.

Yes and the quality and flavor is are delicious. I try to keep them in the freezer for soups and sauces when I can get them. I save the rinds from other parm cheese I buy as well.
