I have never heard of this.
Green peas?
Roux?
Tell us more- recipe or pictures, because maybe others have never had this either.

I used to mix my chicken and dumplings with peas- delicious. I haven’t had chicken and dumplings in forever

da Parish. but my mom's family is from bumfrick SW Arkansas, which is why we ate it growing up.
My mom does it the easy way. Two cans of tender peas, water to fill those two cans. bring to boil then add canned biscuits in small pieces. cook until thick and creamy. add whatever seasoning you want.
There are better ways to make it, but that's what we ate growing up

you can totally add cut up chicken to it for protein. I've also fried bacon to put in it too

We have always had green peas as a side to chicken & dumplings
Along with sweet potato casserole & brown & serve rolls
Thinking about it that’s the only time we had brown & serve rolls

My mom would also usually cook English peas as a side whenever she cooked chicken and dumplings.
