Pork salsa verde

Anyone got a good recipe to share?
Today I used
3lb boneless butt, seasoned and browned hard in a Dutch oven, then sliced into 1in cubes
Sliced yellow onion and 4 sliced jalapeños into the pot to deglaze and brown
Added a jar of roasted green chiles(was in a hurry so I used jarred) and a can of rotel tomatoes
Seasoned with paprika, cumin, chili powder, garlic powder, kosher salt.
Added pork back to pot and just covered with chicken broth.
Covered and into 300 degree oven. Plan to cook for 2-3 hrs. Will garnish with cilantro and crumbled Queso fresco.

Add some roasted tomatillos to that and it'll eat!

I have never made it. I would love a post step by step post with photos next time someone cooks it. It’ll be interesting.

I just cut up a butt and put it in the Instapot with a jar of Herdez Salsa Verde. Stupid easy and very good.

Roast some garlic, a dozen or so tomatillos and a couple each of poblano, Anaheim, jalapeño, and serranos. Cover them up and let them sit til you can peel them. Throw them in food processor with some lime juice

Brown cubed pork with S&P, cumin, and oregano. Pull out and brown your onion. Throw the pork back in and dump your salsa verde in with pork and onion. Simmer til desired thickness

Some folks add chicken stock but I like mine thick.

I have made this recipe a few times and really like it. It’s a little work but worth it to me. I broil everything; tomatillos, garlic, peppers and chilies.
