Does anyone know where I can buy a couple of pounds of pork temple meat in the Lafayette area? I called up at two different places, but one does not carry and the other would only be able to order a large quantity for me. I'm willing to use pork shoulder but would prefer using temple.

They are sold in 15 or 30 pound cases.

Boston butt is far superior to temple meat. The intramuscular fat alone makes it so. Temple never gets as tender as butt.

Temple meat became popular because it was (1) cheap, (2) available in a packaged case so it was easy to buy for jambalaya, and (3) pretty much already cut. But for some reason, people think it’s a secret cut of meat because it’s not well known.

Yep, and you may try Lagneaux's Meat Market on Ridge Rd.

Negative. Can buy in my area in packs as small as 3 lbs.

Negative. Temple meat has a gelatin that makes its gratin second to none on the pot bottom.

Negative. Temple gets as tender or better than boston butt in my opinion.

The ONLY thing true about this is that it comes from the processors in large batches. I can buy it a pound at a time from a retailer. The rest of that jiberish is unequivocally false. It’s very evident you are talking about of your arse and have never used temple meat before.
