Potatoes Leftover From Crawfish Boil

Looking for some good recipes. Potato salad, mashed potatoes, whatever you got I'm listening.

I would eat them cold right out of the fridge like an apple. Seriously.

But absent that I would slice them and pan fry.

I mash them.

They should be super tender already. Mash them and reheat in a pan with a little milk and sour cream.

If they are a little firm, chop them into bite size pieces and add mayo and make potato salad with them.

Make a hash with some breakfast sausage and eggs and cheese.

leave skin on, dice into not small but not huge pieces, add some dill, mustard, mayo etc and go with a cajun red potatoe salad

I always cook twice as many as we'll eat just so that I have leftovers...my favorite is just to bust them up and lightly saute in a little butter...makes an excellent side dish to go with almost anything...

Think I'm going to try the mashed potatoes with sour cream and cheese. Sauted in skillet with some onions.

If you have any leftover, add some half and half until it becomes soupike thin. Throw in some real bacon bits and viola, potato soup.

Next time, cut them in chunks. Put them in a ziploc bag and add a little olive oil. Toss them until coated. Put them on a baking sheet line with non stick foil. Roast at 425 until browned and crispy. They'll be moist and creamy on the inside. Season before roasting if they aren't seasoned enough from the boil.
