Prime Rib Rub

Attempting to cook a prime rib on the Green Egg. Any recommendations on how to cook or rubs?

With any piece of good beef, it's hard to beat simple Salt + Pepper + Garlic.

I use kinder prime rib rub (with black truffle) + hardcore carnivore black.
I remove bones from roast and trim the roast. I also French the ribs. Then, I use pig stand basting oil as a binder for the ribs mentioned above. I then truss the ribs back on the roast.
This was smoked on my Kamado at 225 until internal 125. While this is smoking, lightly melt some butter and Mia it with fresh rosemary and thyme. After the roast hits 125, pull it and coat generously with butter and herb mixture. While that is happening, I let the egg run full hot for about 15 minutes to get to about 500F. Put the prime rib back in for about 10 minutes. Pull and rest.

How it is sitting on the board in the first pic is how it was sitting on the grates in the Kamado.
I didn’t say it but I guess I should, I put my smoke deflector in so that it was cooking with indirect heat.

Exactly what I do as well. Try to pull a little earlier than 125 as my people like it rare and it tends to creep up about 5 degrees or more as I let it rest for the sear.

Its going to be cold this weekend. Can I let it rest outside uncovered? My plan is to get it to 120-125 on pellet then hit it hard on gas grill. How long should I let it rest 15 minutes?

Gonna attempt my first prime rib this Christmas. I need help/suggestions. Do I cook in the oven or smoke it? Really don’t want to mess this up.
