There's definitely a good amount of black and red pepper, but I taste something completely different. Just can't put my tongue on it...

The gravy they put on the mashed potatoes is unique. I'm almost certain it's a boil in bag product but, it has something that flavors it different from any other MP&G on the fast food market.
Stadium Rat's Tasso Gravy
This is similar to Popeye's gravy that goes on their mashed potatoes, but with the best ingredients. It tastes MUCH, MUCH better.
3 Tbs vegetable oil
4 chicken gizzards
1/2 cup ground beef
3/4 cup ground pork tasso
1/3 cup green bell peppers, minced
4 cup water
14 oz chicken broth
14 oz beef broth
1/4 cup cornstarch
2 Tbs flour
1 1/3 Tbs milk
1 1/3 Tbs white vinegar
2 tsp sugar
2 tsp salt
1 tsp black pepper
1/2 tsp cayenne pepper
1/2 tsp garlic powder
1/2 tsp onion powder
1/2 tsp dried parsley flakes
Procedure
Heat 1 tablespoon vegetable oil in a large saucepan. Sauté chicken gizzard in the oil for 4 to 5 minutes until cooked. Remove gizzards from the pan and finely mince.
Add bell pepper to the saucepan and sauté it for 1 minute. Add the ground beef and ground tasso to the pan and cook it until it's brown. Use a potato masher to smash meat into tiny pieces as it browns.
Add water and beef broth to the pan. Immediately whisk in cornstarch and flour. Add remaining ingredients and bring the mixture to a boil. Reduce heat and simmer gravy for 30 to 35 minutes or until thick.

What an ugly thing to say. Popeyes rings are big and the batter was similar to the ones on the chicken. I used to get them at the Popeyes just north of LSU campus. This Popeyes occasionally ran a special 20 wings for $5 and 10 pieces(legs and thighs) for $4.99. It was replaced by a jack in the box. That was a black day in fast food.

Thanks for the gravy recipe. One questions that is unclear.
shouldn't this be mixed with a bit of water, like a white wash, first or is this done while the liquid is cold?

Have not ordered cole slaw in 26 years due to my MIL’s expertise which she passed on to my wife.
HOWEVER, the best Popeye’s item were the biscuits in the old days when they were made from scratch on site. The frozen pop in the oven variety are like hockey pucks compared to the OG biscuits.
If you are too young to remember watching an employee mix up a batch through a large plate glass window, I pity you.

Not to derail this, but does Popeyes still offer a fried chicken liver dinner? The Popeyes on Pinhook used to around ‘06-07. Not sure if they do so anymore.
