Recipe for Seafood Sauce

I've been baking tilapia for the family for the past few months and seasoning it with lime juice and then some dry seasoning - maybe Tony's, Emeril's, etc.

I'm looking for a good sauce recipe for the baked fish. I'd love something like a cream sauce (like Copeland's Lacombe sauce - I think) but any good sauce recipe that you've tried and enjoyed would be appreciated. Thanks.

Aioli sauce is good on fish. Pretty simple to make too.

reminds me...I still want Opie's seafood sauce recipe.

I've made this one a couple times and put over grouper. Pretty rich, but it's easy and good.


2 oz shallots, chopped
14 oz dry white wine
1 3/4 pt fish stock (I used shrimp stock)
14 oz heavy cream
4 oz butter
1 1/2 oz Chopped parsley
salt
pepper shopping




Combine the shallots and white wine in a saucepan.
Reduce until almost dry.
Add the fish stock and reduce by two-thirds.
Add the cream and reduce slightly.
Swirl in the butter
Add the chopped parsley.
Season to taste.
