They have food trucks near the railroad downtown. Not sure what days; might just be weekends.
Bad Wolf BBQ truck has some good stuff. I see they recently posted special items:
Pork belly burnt ends with blueberry gastrique
Pepperjack brisket boudin
jalepeno cheddar sausage
Flying Burger & Seafood is good for casual lunch. Extensive menu of burgers, fried fish, shrimp, etc.

Sundown has a nice patio and pretty good food.
Beauvines for a good steak.
Brister's or Badwolf for BBQ.
Utility for pizza and local beers.
RAW for sushi but i'm not sure they have opened back up for indoor dining.

Excellent sushi, not sure if they allow dine in or not right now. Your other post about Utility Brewing, my favorite place when I go to Ruston. Also, Nina's I think it's called next to Sonic by La Tech has good authentic Mexican food.

Dawg House for burgers. It turns in to a college bar later in the evening but their burgers are super solid.

Johnny's pizza if you feel like just picking up pizza
La Bamba for margs & mexican food
Portico is also a good spot for food and drinks
