Recs for a good side dish of filet mignon

Just looking for something different. I usually do creamed spinach, or garlic mashed potatoes.

Any recs?

Quarter a head of lettuce, hot grill just to leave grill marks, make wedge salads.

Grilled wedges of cabbage are good too. Olive oil/salt/pepper first. Medium temp grill, long enough to soften a good bit. Squeeze lemon and let rest 10 mins.

Smoke skinned potatoes, smoked mashed spuds.

Grill asparagus.

How many do you need?

Potatoes and creamed spinach are the best, but, Brussels, asparagus, ans mushrooms in a red wine reduction are good choices.

I mean, it's hard to pair sides with a piece of shoe leather.

Asparagus…olive oil and salt and pepper. Grill on aluminum foil for 15 minutes.

well, I bit, and you hooked me.

I do know a few people that would probably order a Filet well done, then bitch about it being tough.
Never understood why anyone would want a steak cooked past medium. It loses all flavor and becomes tough, regardless of cut.

Asparagus is a good one.
If you want something a little different than grilled, try this.

My wife and family love it.

1 lb. fresh asparagus with about an inch trimmed off the tough ends.

Rinse it and pat it dry with paper towels.
Preheat oven to 450.

Shake it up in a gallon ziplock bag with
2 cloves minced garlic
1-2 Tbsp. EVOO (just enough to coat it as a binder)
1 tsp. salt (you can adjust depending on how salty you want)
1/2 tsp. fresh cracked black pepper (same as the salt)

Spread it in a single layer on a foil lined baking sheet and sprinkle about 1/4-1/3 cup fresh grated Parmesan Reggiano over the asparagus.

Stick it in the oven for about 7-10 minutes depending on how tender/crispy you like it.

Quick easy and tasty!

Plus it goes well with chicken, pork chops, fish... pretty much anything you bake, fry, or grill.
