Keep it simple. If still on half shell grill skin side down - no need to turn. Sea salt pepper maybe a squeeze of Lemmon at the end.

Into skillet. When flipped, squeezed lemon on the cooked side. Flipped once more to get some lemon on the other. May have been the best fish I have ever cooked.

If you have snapper on the small size, gut & scale, but leave whole otherwise...google red snapper veracruz style and go to town. Fish is either baked or grilled with a topping of tomato, onion, parsley, lemon, capers, etc. It is a gorgeous dish on the plate, and it's fun to eat a whole fish still on the bone.

I'd use Italian dressing with house seasoning and grill it

I second the ceviche or sashimi.

If you like it, use it and ignore the snobs. It's you eating it.

Come on man...it's salad dressing on fresh fish. It's not snobby knocking it, it's just wrong.
It's one thing to eat it yourself and like it, but another to pass it off in a recipe thread. I'm sorry it just sounds so terrible it makes me
