As far as smoked sausage I prefer Richards.

I get my smoked sausage from the Farmers Market in Raceland. They have a guy there that sells excellent smoked sausage.

Richard's. Savoie's tasso is about the only good product they make.

Used both many times. One tends to fall apart more, but other than that, it was as long as it is tall. I've switched to Conecuh or Rabideaux's depending on how much I need.

I've read the raves for this, and have tried it twice. Once grilled and once in gumbo.

Both times is was overwhelmingly greasy.

BTW, Veron's or Savoie's get my vote

I tried Conecuh several times and still don't get the love. I didn't care for it. Didn't care for Rabideaux's either.

I like sausage other than Savoie's. I don't ever use Richard's. He asked the choice between the two. I actually like the flavor Savoie's imparts and have no problem with it at all. I use others that I buy from various meat specialty stores around the state. I bought some andouille from Butcher and was very disappointed. It has a strange component that added a strange flavor to my gumbo. Not using that one again.

Pretty sure Savoie's started out as some little store sausage in South Louisiana.
Probably Richards too.
