Roux Oil Flour Ratio

I’ve always heard equal parts. Not by volume but weight. If you use a cup of oil should you add more than 1 cup of flour? What do y’all do?

I'm probably around 1:1.5 cups. I measure my oil then add flour until I get the thickness I want.

I always go 1 to 1, some people go with 1.5 flour to oil.

If you use 1 cup of each, you wind up with 1 1/3 cup of roux with a little extra oil. So if you want to eliminate the excess oil, use a little less than 1 cup of oil.
Using equal weights sounds like a disaster. Flour is much less dense, so you'd wind up using a LOT more flour.

Maybe I’ll do 3/4 cup oil to 1 cup flour.

Despite what I said above, I usually use 1:1 because I find it easier to stir and that makes it less likely to burn.

I always use a little more flour than oil. Don’t really pay attention to the exact amounts just eyeball it

I use 1:1 like a few others said. Youre going to skim the excess oil off during the simmer either way.

Years ago I read an article in the Times-Picayune about making a roux.
The article said the ratio of 1:1 is by weight not volume.
Been doing it that ever since.

Apparently the internet can't agree on the conversion but assuming the following:
1 cup flour = 130 grams
1 cup veg oil = 220 grams
I suck at math but it looks like you would need about 1 3/4 cups of flour for 1:1 by weight.

For example I usually measure out flour first. 2oz, 4oz or however big a roux I’m making and match that weight with oil, 2oz, 4oz.
Volume wise you will have more flour but by weight the ratio is 1:1.
I never measure by any other method.

I personally prefer somewhere around a 1.5:1 flour to oil ratio (by volume). I’m not weighing out my ingredients like I’m in chemistry class. Some of you can really complicate simple shite.

I started doing 1.5 floor to 1 oil after TH03 recommended it and it's the best thing I've done for my gumbo.

1.5/1.75 to 1 usually. Comes out perfect.
