Rump vs. Eye of Round

Decided to make a roast in the oven while watching games today. I usually do a rump roast with carrots and potatoes thrown in.

When I went to the store today I noticed Eye of Round was a bit more expensive so I figured 'hey, maybe it's better than rump.' So, I bought a 3.4 pound roast.

Any difference in taste or cooking technique? Which do you folks prefer?

Eye of round is a lot leaner than rump. Some cook it down but I roast it to medium rare then slice real thin and eat. It has a chew to it but cooked right that's a good thing.

The wife likes medium-well. Would that make it tough? Medium-well always worked with Rump.

That's the way I like it too. I use a simple rub of olive oil, kosher salt, and coarse ground pepper. Preheat the oven to 500 degrees, put the roast in for ten minutes, then turn the heat off and let it cook for 2-3 hours without opening the oven door. Comes out perfect medium rare. Works best with a self-cleaning oven because of the extra insulation.

I prefer the rump. It's more forgiving when roasted. The eye is too lean and chewy for my taste regardless of medium rare or med well. However, maybe if you slow cook it to the wife's taste, it might overcook to the tender point. I think you'll find you like the rump better for roasting purposes, though.

Thin sliced eye is okay for sandwiches.

Thanks for the advice. But I'm just wondering. Why was the Eye more expensive?
The costs of different cuts really baffle me.

Fat is cheaper than lean meat. The rump has a big heel of fat on it that needs to be trimmed off and the meat itself is marbled with fat.

Nothing wrong with eye of round, just do not over cook it.
