Scrapple, Livermush, and Goetta

I am a big fan of scrapple. My mother used to make it about once a year when I was a kid and I loved it. Nowadays it can be ordered online and I think Rapa brand is the best. Scrapple is big in Delaware, Maryland, and Pennsylvania.

I have also heard of livermush, but never tried it. It is big in the North Carolina Piedmont. To me it sounds very similar to scrapple.

That brings us to goetta. It is a Cincinnati thing but made with oats instead of cornmeal. I have never eaten it either, but hopefully it is better than their chili.

So, my question is, has anyone out there tried any of these dishes? If so then what are your thoughts about them?

Originally from the Pittsburgh area, so I had scrapple as a kid. Even made it once for my Louisiana wife; wasn't the best but not bad. She tried it again when we were on vacation in Philadelphia.

Had scrapple for breakfast in Delaware once. Didn’t think it was too bad at the time and ate it all. But honestly, I don’t remember specifics about it’s flavor.

Never tried any of those but will eat some fried Spam for breakfast about twice a year and Midlands South Carolina BBQ hash(the mush over rice, not the stringy crap) as many days as possible.

I've had scrapple. My wife and drove to Philly one weekend a few years ago and we were at a breakfast place and they had it so I had to try it.

Disgusting, couldn't finish it and I grew up eating pickled pigs feet, pickled pig lips etc. hogshead cheese and the like and would not eat scrapple again.

I spent a couple of my early years in Central PA growing up, while Pops was in school, and that scrapple stuff is not my cup of tea. No Thanks.

Both parents were from Cincinnati, so I grew up with goetta for breakfast. Dad would make loaves of it and freeze it when we moved to NOLA in the 70s. I haven't had it since Dad passed in 2012. Will have to order some online.
I always liked it for breakfast with eggs. Would also fry some up for sandwich with yellow mustard.
I also love Dixie chili on my hot dogs.

My Dad did bring back some from Cincy called Giles. I looked it up online and you can get 6 1 lbs rolls for 70 bucks. Seems expensive but cheaper than a trip to Cincy.

I have family in Ohio and bring Goetta back every time we go up. It’s good. Basically breakfast sausage and oats and cooked like a breakfast sausage patty. It tends to fall apart on the griddle unless you are very careful when flipping.

I have a recipe, will post when I get back to my computer.

8 cups of water
21/2 cups steel cut or pinhead oats MUST BE THESE KINDS OF OATS
3 tablespoons salt
1 teaspoon white pepper
1 teaspoon garlic powder
1 teaspoon rubbed sage
1/4 teaspoon allspice
4 bay leaves
1lb ground pork
1lb ground chuck
1 large onion diced

Bring water to boil add Oates and all spices reduce and simmer cook covered for 2 hours cook beef pork and onion in skillet drain.

Remove bay leaves from Oates mix in meat and onion continue cooking for 1 hour

two 9x5 loaf pans greased put goetta in pans cover and refrigerate over night
slice and fry in a little butter until brown on both sides .
