Seared Tuna Recipes

i like to sear mine on the grill. 1 min on each side still raw in the middle w/ a little rosemary fresh crack salt and pepper and soy

here's mine. simple and tasty. Sesame crusted tuna. But remember... you have to have FRESH, high grade tuna for it to be worth a damn. If it smells fishy, you'll never get that smell outta it.
Dry tuna steaks on paper towels so there is no moisture. Sprinkle salt on to steaks. Coat one side of steak with oil. Press oiled side in to sesame seeds, making sure to heavily coat. Repeat with the other side of steak. Place in to heated pan that has been sprinkled with oil. Cook each side about a minute and thirty seconds. Or until the sesame seeds have browned and crusted. But you want to make sure that the center is rare. And don't forget that the tuna should be room temperature before you start. Slice thin and serve with soy sauce and wasabi paste. Good stuff.

I like to chop up a little bit of butter to about the size of minced garlic and put some on each side. After that I just put a little salt and fresh ground pepper on it. Then I just sear each side and throw some soy sauce on top of it after. I'd garnish with some citrus and maybe wasabi

if your looking for conveniance, the Foreman grill will cook that bad boy in about 3 minutes...thats what I do...

Cook the tuna directly on a starter chimney. Really high heat. You can get a really good sear this way.

Tangerine Tuna
4 tuna steaks About 2 pounds total...1/2" thick
MARINADE
1/4 cup soy sauce
1/4 cup tangerine juice, fresh squeesed
3 tablespoons honey
2 tablespoons sesame oil
3 cloves garlic, minced
1 tablespoon fresh ginger, minced
FOR FISH
1 tablespoon sesame oil
1.
Mix together all ingredients of marinade in shallow nonreactive pan. Place in tuna steaks and marinade for 10 min. per side.
2. Blot the steaks dry, and brush with oil
3. Place on very hot grill for 1 1/2 minute per side.....Serve at once
