shrimp fried rice/ any recipes to cook in a wok?

Anybody have any good recipes for shrimp fried rice? Or anything besides Google search results?


Any other recipes that I can use my wok to cook in?

This is something you should let the Asians cook for you. It's to cheap and quick to mess with on your own.

it's a pretty basic thing to make. I've never really used a recipe. maybe there are fancy ways to mix it up out there but with SFR I think traditional is best.

It's always best to use cold or room temp leftover rice, IMO. Throw it in a pan with sesame oil and start cooking, add soy sauce and chopped green onion, create hole in middle to expose the pan and crack a couple of eggs in there and let them cook then mixed to scramble.

You should have already cooked your shrimp and have them ready to toss in at the end.

Need day old cooked rice.

Cooked Shrimp - I chop mine if they are big at all. In a bind I have used canned shrimp - nice and fishy/shrimpy tasting.

Chopped onions, chopped carrots, a few uncooked green peas, a bit of garlic and a bit of minced ginger, chopped scallions, an egg or two, soy sauce, sesame oil if you like it.

Heat wok, add oil when wok is very hot. Throw in garlic, carrots, ginger and onions, cook for a half minute to a minute, add sesame oil, add rice, peas and cook for a couple of minutes stirring. when rice gets nice and hot, make a hole in middle and add egg. scramble and then add scallions and soysauce. Remove from heat and plate.

I cut my veggies small and don't really cook them a lot because i like them hot, but not completely done. A little ginger goes a long way and can overpower the dish.

We do mixed pork - cubed small and cooked in oil with garlic and ginger, mixed veggies, broccoli, carrots, onions, peas, water chestnut slithers and then add a pack or two of ramen noodles with chicken seasoning and a splash of water ond maybe rice wine. Nice quick and sort of chinese. Add soy sauce at table.

I thought shrimp fried rice was more of a side dish/accompaniment? This sounds like something else entirely.

Let's get Powerman in here to clear this up.

Similar to the way I do it, but I usually add the sesame oil near the end. I gave up trying to scramble the egg in the fried rice. If I add it at all, I cheat and scramble the egg separately and then put it in the wok.

I'm good friends with a lady who owns a Chinese Rest.... she cooks her egg first, removes it. Then the veggies, then the the rice. Adds the egg back when she puts her shrimp.

i am assuming he is giving me other ideas for dinners that I can cook in my wok

Get your wok smoking hot, layer of oil, add in scrambled egg. Swirl pan. You want to create a very thin omelet in essence. Remove, wipe out, smoking hot oil, veggies aromatics. Remove. Wipe out. Add oil, hot, shrimp. Remove.

Repeat with rice. Then add soy sauce and all the ingredients above.

Tip: It certainly isnt "authentic" but I find using butter as lipid for the rice frying creates the nutty brownness you are looking for far superior than any other oil, especially sesame, which has a tendency to get funky.

Then pick up some beer while you are there. Fried rice doesn't really taste the same without sesame oil.

There are about 15,000 versions of fried rice. One ingredient isnt going to make a difference. Its a technique, not a Commandment.

Yes - just something else to try.

He likes to give me a hard time. Don't know why - never could figure it out. Maybe I stormed his castle or poked his dragon with a spear in a past life.

One never knows how some of these things get started, so we just live with them.

If you don't have it, leave it out.
