Side dish for blackened catfish recommendations.

going to do some asparagus. what is another idea?

They used to serve blackened catfish one day a week at the Petroleum Club in Lafayette - maybe it's just me, but I always liked it with mashed potatoes on the side.

Corn maque choux and some greens (maybe spinach slightly wilted).

That's easy. Slice some potatos or cube or whatever and put in a pot of cool water about an inch above the potatos. Bring to a boil then turn off the heat and let sit for about 4-5 minutes just to parboil then remove and put into a colander. Don't overcook or they will turn to mush.
Slice a couple of onions and saute' in butter until just transluscent on medium low heat add potatos and cook through gradually getting the heat a little higher so they will brown and crisp up some. Season and serve. Just frikkin hashbrowns. Add to it if you like can mushrooms, can chopped waterchestnuts (for a good crunch) peas, garlic, bellpepper whatever to jazz it up some.

Whatever. It's not atom splitting. How much do you like onions? Do you like them sliced or chopped? How many potatos? It's your dish add whatever you like. The only thing is to not over boil the potatos. Just a slight parboil. I like to slice mine like potato chips kinda thin and let them cook to brown then turn them. I like mine kinda crispy, you could say it's a fine line between my crispy and my burnt.

boil new potatoes in a little crab boil, mash them, add butter and garlic powder to taste . Pretty simple and perfect side for the catfish .
