Sides to go with brisket

I'm fixing a non-traditional Thanksgiving dinner on Thanksgiving for 7 people. We're smoking a brisket instead of turkey.

I usually just fix some baked beans, corn on the cob, and cole slaw but curious what other folks typically fix to go with their brisket.

Half of the party is also diabetic so anything that's lower sugar/lower carb would be great to add in as an option.

I don’t smoke brisket often, but when I do I usually do cheese grits and collard greens for sides.

I like potato salad and baked beans with bbq and perhaps something green like good mustard greens.

For low carb, you can do a good bit with cauliflower. Mashed, roasted, cauliflower mac and cheese. Roasted broccoli and/or brussel sprouts, sauteed spinach and mushrooms....

Your options are fine. My preferred bbq sides are usually one or two of baked mac n cheese, potato salad, and baked beans.

A good low carb/sugar option would be smoked cabbage. I don’t have a good recipe off hand but I like it with some smoked bits of pork thrown in.

I know this isn't exciting or really even a side, but I always like to have something acidic to cut through the rich fatty brisket. Maybe make some homemade pickes and homemade pickled onions.

For low carb sides I have done a coleslaw with Stevia instead of sugar, potato salad but use cauliflower instead, grilled okra (really tasty), broccoli salad, deviled eggs, collard greens and grilled veggies

Used to stop at a bar between Knoxville and Corbin, KY. They had breaded and fried large, long colored (Aconcagua?) pickled peppers.

Ever seen them? I would love to know what they were, why that is the only place I ever saw them, Bla, Bla, Bla.

Stopping there for fried peppers and cold beer was the best reason I could ever find to smooth out the drive up I-75 with all those folks from Michigan and Indiana.

Warning, cilantro involved.

Marinate cauliflower florets in a vinegraite and grill until charred a bit.

Roasted Brussels.
