Smoked Turkey Gravy Recipe

I’m going to smoke a turkey for Thanksgiving and have never made a gravy from the drippings. What is your gravy method from smoked turkey drippings?

I don't think I would do this as the drippings may be too harsh.

Instead, I would get some smoked turkey necks (or smoke them yourself) and make a stock with them and reduce the stock a bit. Use this as the base of your gravy.

You can make a roux from the drippings and make a stock from the neck and giblets. Then combine the 2.

You may have to dilute it a bit with water or canned broth, but otherwise it's awesome in my experience.

I have used brisket drippings in a bbq sauce before. The flavors of the fat and the smoke are awesome, but a little goes a long way. Because of the strong smoke flavor, instead of making a gravy from the drippings, what I would do is make a gravy and then add a small amount of the smoked drippings to the gravy and go by taste. But, that's based off smoked brisket drippings in a bbq sauce. Your turkey drippings may be fine to make gravy with. Only one way to find out... go for it!

I’ve done this several times and it is great. Makes mor of a thin jus which is really good to start a Gumbo with on Friday.

We used the drippings from a roasted bird and a smoked bird last year. We were gonna keep them separate in case the smoked was overwhelming. In the madness of getting everything on the table, they got combined.
