I always have a problem peeling BBQ shrimp, so I peel before broiling and use the shells for a flavoring stock. I would sure peel them before reheating in microwave, but that's just me.

I would suggest putting as little heat as possible to them, I would allow them to come to room tempature first, take a cast iron skillet and putting just the sauce in and heat it to a good simmer then introduce the shrimp, cut the fire and put a cover on them.

Sounds like you are overcooking them or not using fresh product......Next time try a little lower heat...I know your still using the shells for stock, but theres just something about the head fat that gives the shrimp a little something extra.
