Tartar sauce recipe

Anyone got a good tartar sauce recipe? Didn't see one in the TD cookbook.

Ingredients
1 cup mayonnaise
1/2 cup chopped dill pickles
1 teaspoon capers, chopped
2 teaspoons Dijon mustard
2 teaspoons chopped shallots
2 tablespoons chopped scallions
2 teaspoons lemon juice
6 drops Tabasco sauce, or more to taste
Salt and pepper to taste
Additionally, I personally think that homemade mayo has a better, brighter taste than any store bought and it's very easy to make (immersion blender).

This one is from Kevin Graham who was the chef at the Windsor Court many years ago. I've made it a number of times. I don't always use the tomatoes and sometimes, I vary and add chopped olives which I love in tartar sauce. I will also sometimes add a bit of sweet relish. I use lemon zest as well. It brightens the flavor.
• 2 fresh tomatoes, peeled, seeded, and finely chopped
• 2 fresh jalapeno peppers, stemmed, seeded, and finely chopped
• 12 cornichons, finely chopped
• 2 tablespoons capers, finely chopped
• 1/4 medium onion, peeled and finely chopped
• 2 cups mayonnaise (use Hellman's or homemade)
• 2 lemons, juice of
Change Measurements: US | Metric
Directions:
Prep Time: 20 mins
Total Time: 1 1/2 hrs
1. Combine all the ingredients in a medium bowl.
2. Cover and refrigerate for 1 hour before serving.
3. Any leftover sauce may be stored, covered, in the refrigerator for up to 3 months.

I have seen a recipe for tartar sauce.. But I just assumed it had cream of tartar in it...

Mike Anderson's Tartar Sauce
1/2 cup finely chopped yellow onions
1/3 cup sweet relish
2 Tbs dill relish
1 cup of mayonnaise
Combine all ingredients. Chill and serve
Yield: 2 cups

Don's Tartar Sauce
1 quart mayonnaise
1/2 pint cold water
1/2 pint sweet relish
1 tsp dry mustard
1/2 cup ground onions
1/2 cup ground celery
Mix all ingredients together in a bowl. Serve with fried seafood or salad.
Yield: 1 1/2 quarts

Paul Prudhomme's Tartar Sauce
1 ½ Tbs unsalted butter
½ cup finely chopped onions
1 medium apple, peeled and finely chopped
1 ½ cups Garlic Mayonnaise
¼ cup sweet pickle relish
2 tsp Tabasco sauce
1 ½ tsp white vinegar
1 ½ tsp lemon juice
½ tsp minced garlic
In a 1-quart saucepan melt the butter over high heat. Add the onions and sauté about 1 minute, stirring occasionally. Reduce heat to low and continue cooking until onions are lightly browned, about 2 minutes, stirring frequently. Stir in the apple; cook just until apples are tender, about 2 minutes, stirring occasionally. Remove from heat.
Transfer mixture to the medium bowl of an electric mixer. Add the remaining ingredients and beat on low speed until well blended. Refrigerate at least 2 hours before serving.
Yield: Makes about 2 cups
