Thanksgiving side dishes

Whether it's turkey or prime rib for dinner you need those side dishes to go with it. Here is a favorite of ours, every year there is none left. Most people grab some of this before even going for the main course.

Man I love thanksgiving sides. Always go overboard and make way too many haha

I can only eat so much at one time and I love the turkey and gravy. My favorite sides are:
Cornbread dressing
Squash and andouille dressing
Sweet potato casserole
Spinach Madeleine.
I don't need rolls or salad or anything else, though we always have more sides.

I'm sidelined this year due to a pretty severe ankle surgery, but my typical T-Day menu would be the following when I had at least 25 people show up at the house.
3 Fried Turkeys
2 gallons of chicken/sausage/okra gumbo
Rice and Potato Salad for the gumbo
Eggplant/Shrimp/Cheese Casserole
Baked Mac & Cheese
Giblet Gravy
Sweet Potato Casserole
Pies for dessert-----Pumpkin, Pecan, Apple
Beer, Sodas, Cocktails, Wine, etc.

Prop up watching the games, get wheeled to the table for dinner, and back for a night cap and the primetime game.
No cooking or dishes. What a life

Although I really do enjoy cooking a large meal with all the fixings, it would be nice to take one off.

Thanks for the kind thoughts. I'm still getting some cooking done but doing it like the late Paul Prudhomme was doing it on his PBS Cooking Show-----sitting down in an office chair by the stove. I set it as high as it will go and can see well enough to get some cooking done, but don't even want to think about trying anything close to that T-Day menu.
I did all the cooking for that one and would start on Monday with the prep work, Tuesday making the gumbo and potato salad, Wednesday making all the rest of the dishes and all I had to do on Thursday was fry the turkeys and pop casseroles in the oven.
Going light this year with a simple baked turkey, giblet gravy, mac & cheese and a pumpkin pie. There will only be 4 of us this time around.

We always have AT LEAST 3-4 different dressing/stuffings
- Mom's Family dressing
- wife's family dressing
- aunt's family stuffing
- sister's FIL that passed away a few years ago dressing
- spinach casserole (spinach fritatta/crustless quiche)
- sweet potatoes
- pea/asparagus casserole
- Stuffed Celery to snack on before lunch
- Sometimes Mac & Cheese
We quit doing rolls a few years ago- who needs them?

Shoepeg Corn Casserole
Green Bean Casserole
Spicy Macaroni with caramelized onions and garlic. So freaking good.
And I'm going to do cornbread dressing this year.
The side dishes are definitely the best!

We have alot of sides. My personal favorites are the cornbread dressing with gravy on top, broccoli cheese casserole (garlic cheese) and corn casserole (both casseroles topped with crushed Ritz and butter).
Oyster filling patty shells, traditional fruit salad, and Waldorf salad are fan favorites. Not mine.
We have rice and gravy, oyster dressing, sweet potato casserole, peas, cranberry sauce, and rolls too. Sometimes other stuff.
But the gumbo with leftover turkey is the best part of Thanksgiving for me. Picking turkey off the bone with cocktails while watching the Thursday night football games is therapy after cooking/cleaning for days and being with extended family. Working the gumbo on Friday or Saturday while nursing a hangover/biting the hair of the dog is equally therapeutic. It's just a real cool time of transition into the Christmas holidays.
I like to do a sandwich with leftover turkey, cornbread dressing, and gravy too.
