I know some of you aren't fans but I enjoy them and don't live in BR. Just got a smoker/grill and want to try to replicate them. Anyone got tips or recipes? Thanks in advance.

Well they definitely aren't smoked at all.

They are smoked.
They marinade over night with a dry rub and use cattlemens.

They wrap in foil and steam them. Then finish on grill with sauce.

Rib wars
I'm not a huge baby back rib fan and only crave them maybe once or twice a year, like I do Cane's, but I've always thought the ribs at TJ's were very good, however they cook them.

They may cook them in a smoker but they do wrap them in foil which to me is steaming and most purists would bristle. Doesn't matter to me and I understand the need when you have to churn out that many. I eat them occasionally but by and large I prefer others. I don't like a rib that falls off the bone. I like a rib that pulls off the bone with your teeth. A little chew.

I worked there many years ago. Maybe it's changed. They wrap their "baked" potatoes in foil and boiled them - very fast.

Anyone have a recipe for their sauce? The one that is on the table not sure if it's the same that it is cooked with.
