Tomato Gravy over Homemade Biscuits

My grandma turned me on to this as a kid and has been a favorite over the years. I would love to see some variations compared to mine. Basically a milk gravy from a roux base with salt pepper and a can of diced tomatoes simmered. Sounds really simple but tastes out of this world. Anyone have a similar recipe?

the one i make is just a simple creole sauce (onions/peppers/celery/tomatoes) with diced bacon added. its very good

Dice up a medium onion and cook it down until soft, add a quart of home grown canned tomatoes without the skin, cook down until it's the thickness you like and add a few dabs of butter. Season with salt and pepper to taste.

Pretty much what i make. I go heavy with the black pepper and use homegrown tomatoes. Like you, my grandma also made this for us kids. Along with fresh cat head biscuits.
