I did enjoy reading your list. However, if there is a single restaurant in Houston's Chinatown where you should have dined, it would be Tan Tan. Why didn't you go to Tan Tan? It's certainly the single Chinatown restaurant that is the most well known in Houston and that residents from all over the area would have been to. To have Sinh Sinh and not Tan Tan is like ignoring Cinderella just to give all the attention to her step sisters!
Also, how could you miss Nikko's cheesecakes? Their Japanese cheesecake is a delicious cheesecake that is much lighter and fluffier than a normal one. It's less sweet, but so good.

Friend,
As always, your list was quite edifying. How I envy the couple that enjoyed not one, but three opportunities to dine with you! If you ever overcome your gephyrophobia and can brave a trip to the Northshore, please do contact me; I would be glad to share a repast. Regardless, bull dak from Bonchon and queso w/ chorizo from a Mexican place whose name escapes me make up my only experiences with Houston area eateries thus far. I will be sure to try some of these establishments (as well as the legendary Panchos) when I next find myself in east Texas.
Felicitations,
titofan1892
P.S.: My peers and I await the culmination of your “grand project” with bated breath, as it were. I am certain many others on the OT feel similarly.
