Veal loin chops in a Bourbon glaze

Season Veal chops with salt, pepper, cayenne, add olive oil and let sit over night.
Preheat oven to 375
In hot cast iron skillet add olive oil and drop veal chops on med high heat to brown.... 2 minutes per side for thickness of 1 inch chops.
Transfer skillet to oven for 11 minutes covered.
Prep 3 shallots and 1 clove of garlic for sauce....
Once 11 mins done.... Let chops rest in a bowl for 8 minutes.... Juices will accumulate from meat.
Take same hot skillet and put back on stove and add shallots, cook 2 mins, add garlic, cook 1 min, add Kentucky Bourbon and reduce by half, add Veal juices from rest and 1/4 cup half and half or whipping cream and reduce by half..... Serve over bed of grilled seasoned squash and zucchini.
