Vegas casual spots

i will be going on a last minute trip to vegas in a few weeks so haven't exactly planned anything. Traveling light and with my brother who is notorious in his desire for more casual dining (he hates dressing up).
any suggestions for really go to spots for more casual dining? other than knowing Vegas is a culinary hot spot, i dont know much about the scene. we will be staying a few blocks from convention center.

Most resorts have a casual dining food court. Hofbrauhaus is fun and a short Uber ride from the strip. Eataly in Park MGM is supposed to be like Italian street food and is very good. Hidden Pizza in the Cosmopolitan. Just about every Food Network personality has a casual place in Vegas. Gordon Ramsey's fish and chips is popular in Linq.

Great food and great times!
They do a Schweinehaxen (roasted pork shoulder) on Fridays and Saturdays and it is as good as getting one in Germany

It's not a "hot spot" but the Wynn is near the convention center and has a great buffet that you don't have to dress up for.

Chinatown has a whole bunch of really great Asian food, where local Asians go to eat, so it's not only authentic but very cost effective. Chinatown is located on Spring Mountain Road just West of the Strip.
Those food courts aren't all they're cracked up to be. I ordered a chicken/veg stir fry at MGM Grand and it was $20, more $ if you wanted to purchase rice.
The Strip is like Bourbon Street. Some of the best food in Vegas and New Orleans is well away from the Strip and Bourbon. I've had fun researching the local's spots over the years and don't even consider the Strip for dining options anymore.

Posted this list recently after going a few times in the last few years. Like others have said, most major hotels have good options for casual lunch spots, with a lot having solid food halls with multiple options. Aria and Cosmo have really solid food halls.
Lavo AYCE Brunch: Wife and I did the AYCE brunch with bottomless mimosas on a Sunday. It was great. It's a menu you order from with everything made fresh. Food was great and had a ton of options. We really enjoyed it. I think going with a group would be even better as a lot of the plates had a lot of food.
Eggslut - breakfast sandwich chain in Cosmopolitan. Very popular place and always a line. I try to hit it up every time I am there and really enjoy it.
Cafe at Ellis Island - off strip casino behind Paris. Gets a lot of love on here and well deserved. If you are looking for affordable good food this is a solid spot. Steak and eggs special. Chicken fried steak is awesome. Solid house beer. Plus $5 tables if you want to scratch some felt for cheap.
Umiya Sushi - off strip just last Palms. All you can eat sushi. Have been here a few times and thought it was solid. Great selection and price not bad.
Tekka Bar: hand roll place in Cosmopolitan food hall area. Started in NYC. Have been to both and really like it. Have different prices hand roll sets for 3/4/5 pieces.

I enjoyed China Poblano in the Cosmo. Cool place where you can get dumplings and tacos.

I don’t know what your definition is of casual, but if you want a good, upscale restaurant where you don’t have to get dressed up, go to Spago at the Bellagio and sit outside on the terrace overlooking the fountain. It is not that hot at night, even in the summer.

Most of the nicer restaurants in LV are casual dress. Especially when it’s 110+

I stay at Horseshoe because Caesar's puts me up for free, but I walk the couple of blocks to Ellis (past Tupac's "memorial" on Flamingo) for the food, beer and low table limits, usually $5 for blackjack and craps. Their restaurant offers a flight of their beer for dirt cheap. Steak specials are offered too. The ONLY drawback to this place is cigarette smoke. Bring a change of clothes for later if you spend any time in the casino because you're going to smell like shite.

Herbs and Rye. Go early for the half priced steaks during happy hour. Highly recommended
