Vung Tau - Vietnamese in Biloxi, “birds nest” vermicelli

There’s a pretty big Vietnamese enclave in Biloxi and Vung Tau is right by one of their big community centers / church. Anyway, I found a dish I’ve been searching for since Duong Phoung took it off their menu…or changed to it’s real name and I just didn’t know what to order.
It’s called Bahn Hoi Thit Nuong, or Pressed Fine Vermicelli on the menu, I got grilled pork. Make little lettuce wraps and dip it into fish sauce. $12 plate.
Ever had this dish? Recommended stop in Biloxi.

I've had a few versions of it. With rotisserie pork, grilled pork paste, grilled shrimps, grounded dried shrimps. However, the birds nest is a totally different thing.

So this isn’t ’birds nest’ vermicelli? IDK why I call it that. Dong Phuong didn’t make theirs do rectangle…they made it into little round presses.

Birds nest refers to a nest from species of bird that lives in caves. The birds would use their solidified saliva to make their nests. It is somehow considered a delicacy and very expensive (due to the difficulty and dangerof getting it). I don't buy into it. It's a big scam.

Hate to say I walked there from Harrah’s and had a pretty subpar bahn mi. A little spoiled being in New Orleans, perhaps.
Family running it was very kind. And your pics look good. I’d go back.

That’s literally a 2-3 best bites of food in the world in my opinion. Use to have a restaurant in Lake Charles that made them but they took it off the menu when ownership changed hands.

You don’t have to roll it. You can eat it with chopsticks or a fork. It’s different from vermicelli because of the mouthfeel texture even though both have same ingredients. Like shoestring fries and waffle fries. Both potatoes.

Aside from a banh mi, I’ve not had much Vietnamese food. I’m not picky at all (I’ll often tell the waitress to surprise me and bring me their favorite thing on the menu) and love to try new things. What are some must try Vietnamese dishes? The one caveat I have, I’m allergic to seafood. I’m not so allergic that food can’t be fried in the same oil or even be on the same plate, I can pick around it if need be.

Vermicelli bowls are my go to. Pho is good but I don't always feel like eating a gallon of soup. Vermicelli is more of a cold dish that you can pit pretty much any meat topping on.

Picked up the roast pork and enjoyed it for lunch at waterfront park. Delicious.
