Ways to reduce bitterness in turnips

I pride myself in eating anything, however, turnips may soon be added to a very short list of things that I don't care for (Brussels Sprouts) if I don't find a way to eradicate that bitter flavor they impart. I recently roasted a medley of root vegetables and the bitterness in the turnips stuck out like a sore thumb. I love my root veggies like parsnips and rutabaga, but those darned turnips ruin the party every time.

Suggestions?

ETA: Researching suggested soaking in dairy and/or selecting the freshest/youngest turnips. I think I recall a Keller recipe being adamant about the size of the turnips.

I like this recipe from Mario Batali

The vinegar adds a nice note. Really tasty way to eat turnips imo

I'm gonna have to try that. I've started putting turnips in with my pot roasted duck.

add salt and some kind of acid (vinegar or citrus). or you can add something naturally sweet like diced tomato or red onion. bacon could help as well.
