Alright, so I am my worst critic when it comes to my cooking. But, I have to say this was one of the best I've done lately.

This was an amazing meal!!!


Started the cook with some veggies on the Weber griddle.





These were frozen vegetable I picked up at Costco.


I also tossed a couple of links of Best Stop boudin on the griddle too. Even though dirty rice was a side dish.





As the veggies were almost done I put the seasoned halibut on the griddle in a hot puddle of melted coconut oil and butter.





Everything was done and it was time to eat!





Had some leftover dirty rice from the other night that made for a perfect side dish for this meal.





The fire roasted veggies.





Boudin.





The Blackened halibut.





Throw it all on a plate and it was dinner!

Costa rican bowls.

These are my kids favorite things to get at Raw and juicy in Alys beach.

Rice (I use black rice), black beans, fresh pico de gallo, avocado, over easy egg, and a lime wedge.

Delicious and healthy.
