What Does Squid Ink Taste Like?

I see Paella NOLA has a squid ink seafood paella.

Essentially nothing. Maybe a slight fish taste to it, but that’s about it. I’ve had squid ink dishes a number of times and it seems more like a novelty to me than anything else.

I’m not sure that it really tastes, or if it does it’s really mild. I’ve eaten squid ink pasta multiple times, and it’s always been good, but I think that’s more due to the butter/garlic/herbs/etc... added to the dish.

Because of its' black color, the perception of taste may be altered because of the visual confusion, but as stated, squid ink adds virtually no flavor, just like food coloring.

In the states it doesn’t have much of a taste at all.
In Italy, particularly Venice, it has a very distinct taste. Very briny.

It has more of a scent than a direct flavor. But that scent does impact the overall taste.

Good ink should have a bit of a seaweed taste.
But in pasta, unless it's a super light dish, the other flavors will drown it out.
Its mostly used for color.. kind of like cheap spinach pasta

I had it in Martha's Vineyard decades ago, barely kept it down, have never wanted to try it again. It sort of was excessively salty and fishy...like really strong sea urchins with too much salt.

A little salty. I always get a slight liquorice flavor.
