What is the best oil for frying fish?

Canola? Veggie? Peanut? Truffle?

I like to fry pretty much everything in peanut.

Go buy the off brand tubs of shortening from wal marks or wherever and thank me when you are done. Just be sure it doesn't say "all vegetable" on it. It's made with meat fats which imparts a much improved taste to whatever you are cooking and has a smoke point around 425-450 degrees. It's also way cheaper than peanut oil.

my youngest has peanut allergies so i had to give up peanut oil yrs ago so i use cottenseed oil in all my cookouts, has great flavor and is well below the price of peanut oil

My son also has a peanut allergy and his allergist tells us that he can eat foods cooked in peanut oil. He is 17 now and has never had a problem with peanut oil. Lot of places, like Chick fil A, use peanut oil.
