Specifically for an old fashioned I'm wanting to try something different from my normal 1:1 white sugar I usually do

It’s called simple syrup for a reason.

I do 2 cups of water and 1-1/3 cup of sugar.

Rich brown sugar simple
1 cup brown sugar 1.5 cups water. I'm of the philosophy that syrup should be as rich as possible. It is more shelf stable, requires less syrup per drink, and doesn't water down the drink (that's the job for ice).
I also think old fashioneds and all rum drinks are significantly improved by brown sugar syrup.

Try this
DEMERARA SYRUP
200g Demerara sugar
100g water
In a small saucepan, stir together the sugar and water over medium heat just until the sugar is completely dissolved. Remove from heat, cover, and let cool. Transfer to an airtight container and reserve in the refrigerator.

simple syrup
First you will need glacial ice from arctic Norway & virgin Brazilian sugar cane...

I buy it from a local hipster who delivers craft product via bicycle. It’s made with 18 ingredients and $47 a pint; so worth it.

My simple syrup has two ingredients and sells for $600 a pint

I know its called simple syrup but I like to get a little loose on this one.
I put 1 cup plus 1 tsp water of Bottled water to boil, when it gets to boil I add 1 cup minus 1 tsp of sugar to it and stir for exactly 37 seconds, then take it off the heat. Sometimes I'll pick a few cucumbers before I make it.

1 cup light brown sugar
1 cup water
A dash of vanilla extract
A splooch of local honey
Couple dashes orange bitters
Couple dashes of anogustra bitters
Mix it in a pot, bring to light boil stirring constantly then turn it off. Put it in mason jar in the fridge.
